·     A food safety and hazard analysis system – presented in an A4 ring binder folder.
This document is provided in order to meet legal requirements and to ensure that high standards of food safety are monitored and implemented. You must read carefully the ‘How you should use this document’ page. This describes what you must do to tailor the document, to ensure the system is a true reflection of procedures in your business. You will need to complete the ‘How we do this’ sections where your business differs and remove any pages that are not relevant. Monitoring forms are provided in section four and may be copied as required.
 
·      Digital pocket pen thermometer (FM10) The FM10 pocket size digital thermometer is ideal for checking core temperatures of food before serving. To prevent food contamination, sanitise the probe before and after every use, using the probe wipes provided. Cooked and reheated foods must reach a core temperature of 75oC (82oC in Scotland). Further information on probe care and calibration and temperature monitoring is contained within your food safety system.
 
Wireless Fridge / Freezer Thermometer(FM25) Unlike most conventional fridge thermometers the DigitronFM25’s wireless technology allows you to view internal temperatures without opening the refrigerator door. Each pack comes with two sensors which can be used either both in one fridge or in separate fridges or freezers.
You can take control – put the wireless RF sensors where you want to in the fridge – try out a number of positions until you find the warmest spot. This is where you want to ensure your food is still kept below legal or in-house parameters. These remote sensors transmit temperature data wirelessly to the base station display which can be mounted magnetically to the cabinet or free standing using the fold away bracket. The display is updated every 8 minutes.

The FM25 audible and visual alarms are triggered when temperature exceeds pre set maximum and minimum temperatures after 15mins (this prevents false alarms when door opened for loading) - alerting you to high or low temperatures that could affect the product quality.

Probe Wipes - Mini tub containing 70 bactericidal wipes It is essential to sanitise your probes prior to taking food temperatures to avoid the risk of cross-contamination.  We also recommend that you sanitise the probe after use too.
 
·       Labellord-mini - contains 700 ‘flush’ day labels (100 per day)Attach the pack to the refrigerator using the magnetic strip. Place a corresponding day coding sticker on dishes which are not used immediately, or on opened packaging. For example, if a dish or package is opened on a Monday, place a Monday sticker on the container. This clearly shows that the product must be used by Wednesday. Each day of the week has a different colour, allowing for instant checking of all products and the corresponding use by dates. As an added feature, the labels are ‘flushable’ which means they dissolve in the dishwasher for easy removal.
 
·    Fit Fruit and Vegetable WashTo remove contaminants, all salad items, fruit and vegetables should be washed before use. Fit Wash removes 98% more pesticides, waxes, people-handling residues and other contaminants vs. washing with water alone. The Fit Soak is ideal for cleaning leafy or harder to clean produce. The Fit Spray is ideal for use on individual produce items that are easy to hold.
 
·     PRO-clean Swabs x 10 PRO-Clean is a quick and easy way to accurately monitor the cleanliness of food equipment surfaces to help ensure food safety and product quality. PRO-Clean detects protein residues left on a surface after cleaning. Simply swab a surface, release the reagent and if food residue is present the reagent will turn purple. The more contamination present, the quicker the color change to purple and the darker the color. PRO-Clean quickly validates the hygiene of a surface, allowing immediate corrective action to be taken if necessary.
 
Allergy awareness DVD training pack Staff should be trained in allergen awareness. This introductory DVD allergy training pack for food handlers has been awarded a Certificate of Quality and Merit from the Royal Institute of Public Health and Best New Product of 2006 by the Society of Food Hygiene & Technology. The pack comprises of: tutor's notes and 5 delegates' cards with key issues and multiple choice assessment quiz, one DVD, 23 minutes in two parts: 17 minutes film and a 6 minute review of Key Learning Points.
